I use salted butter in all my baking and this recipe is no different. Real sugar provides more than sweetness to a recipe. Please also don’t try to use a sugar substitute. It doesn’t matter if you use caster/superfine sugar or regular/granulated sugar as you will be melting it down anyway. You should also avoid using icing/powdered sugar as the measurements will be totally different. Using a brown or dark sugar will totally kill the taste of the strawberries. You must use a white sugar for this recipe. But do drink it, don’t waste it! More Ways to Use Strawberries Sugar Frozen strawberries give off a lot of juice which can make the finished curd far too thin. If you are using frozen strawberries, please defrost them first. Using strawberries with no flavour will result in curd with no flavour. The only stipulation that I have is that the strawberries need to be good and ripe.
